Ingredients:
1 red onion, sliced shopping list
1 tbs minced ginger shopping list
1 cup sliced shiitake mushrooms shopping list
1 cup spinach shopping list
1 cup carrots, shredded shopping list
1 cup chopped chives shopping list
1 tsp pepper shopping list
1 tsp sesame oil shopping list
1 package wonton skins

Instructions:
In a wok or large sauté pan, add a little oil and saute onions and ginger.
Add the mushrooms and stir. Add the spinach, carrots and chives. Season.
When mixture is soft, place in colander to drain. Add the sesame oil when mixture is cooled. Check for seasoning.
Using the wonton skins, make half moon dumplings keeping the bottom flat.
In a large saucepan bring 8 cups water to boiling.
Drop the wontons, one at a time, into boiling water. Simmer, uncovered, about 3 minutes.
Remove from heat and rinse with cold water; drain well
