Rum Balls

Christmas Rum Balls Candy Recipe

INGREDIENTS:

  • 2 tbsp Cocoa

  • 2 cups Confectioner's Sugar

  • 2½ cup Vanilla Wafers (finely crushed)

  • 1 cup Pecans or Walnuts (finely chopped)

  • 3 tbsp Light Corn Syrup

  • ¼ cup Rum or Bourbon

PREPARATION:

  • Sift cocoa and 1 cup confectioner's sugar in a large bowl.

  • Mix remaining ingredients and shape the mixture into 1-inch balls using your hands.

  • Sprinkle about 1 cup of confectioner's sugar on a plate and roll the balls in it to coat.

  • Store in a tin for at least 1 week before giving them away.

  • These cookies mellow with age and have a shelf life of 1 month.

  • You can gift wrap the cookies in a plastic foil too.

  • Makes about three-dozen cookies.
