 Coconut Rice

INGREDIENTS: -
Rice - 1 cup (cooked) -
Coconut - ˝ cup (shredded) -
Onion - 1 lengthwise chopped -
Green chillies - 2 chopped -
Ginger - ˝ inch piece -
Cardamom - 2 -
Mustard seeds - ˝ tsp -
Urad dal - ˝ tsp -
Channa dal - ˝ tsp -
Cashew nuts - 5 -
Curry leaves - 5 -
Coriander leaves - few -
Oil - 4 tsp -
Salt - to taste PREPARATION: -
Heat a pan with oil. Add cardamom. Then add mustard seeds, urad dal, channa dal and cashew nuts. -
When they colour change to golden brown add curry leaves, onion, coconut and green chillies. -
Sauté until the raw smell disappears. -
Then add the cooked rice and salt. Mix gently. -
Serve with papad or chips.
